Butternut squash Mac N’ Cheez

Prep time: 5 mins
Cook time: 20 mins
Makes 4-5 servings
- 3 cups dry macaroni noodles
- 3 cups butternut squash, cubed
- 3/4 cup cashews, soaked overnight
- 1/2 teaspoon salt
- 1/3 cup unsweetened plant milk
- 1/3 cup vegetable broth
- 1/4 cup nutritional yeast
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
Directions:
- Prep two large pots with water on the stovetop. In one pot, place the butternut squash and boil until soft for 15 mins. In the other, prepare your macaroni noodles as per directions.
- Once the butternut squash is cooked, add to a blender or food processor along with the cashews, salt, plant milk, broth, nutritional yeast, garlic, and black pepper and blend until smooth.
- Once the noodles are finished, drain them and return them to the pot. Pour in your cheez sauce and stir until evenly distributed.
