Easy Vegan Cinnamon Rolls
Serves:10
Ingredients:
- 2 ¼ tsp instant yeast
- 1 cup almond milk
- ½ cup vegan butter
- ¼ tsp salt
- 3 cups all-purpose flour
- 1 Tbsp cinnamon
- ¼ cup + 1 Tbsp cane sugar
Method:
- Microwave the almond milk and 3 Tbsp vegan butter until warm and melted. Let cool until the temperature of bath water-it shouldn’t be too hot or it will kill the yeast
- Add the almond milk/butter mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes, then add 1 Tbsp sugar and the salt and stir
- Add in the flour, half a cup at a time whilst stirring until the dough is sticky. Once it is too thick to stir, transfer it to a lightly floured surface and knead until it forms a ball. Rinse the mixing bowl and coat with canola oil, then add the dough. Cover and set in a warm place for 1 hour until the mixture has doubled in size
- On a floured surface, roll out the dough. Brush with 3 Tbsp melted butter and top with ¼ cup sugar and the cinnamon
- Roll up the dough and cut into sections. Brush the remaining butter (melted) and cover with a plastic wrap. Preheat the oven to 350 F
- Bake the rolls for 30 minutes until they are slightly golden. Cool for a few minutes and serve immediately
- (Optional Step) Frost the rolls with icing (1 cup powdered sugar and 2 Tbsp almond milk)
- Enjoy!
