Easy Vegan Cinnamon Rolls

Serves:10

Ingredients:
  • 2 ¼ tsp instant yeast
  • 1 cup almond milk
  • ½ cup vegan butter
  • ¼ tsp salt
  • 3 cups all-purpose flour
  • 1 Tbsp cinnamon
  • ¼ cup + 1 Tbsp cane sugar
Method:
  1. Microwave the almond milk and 3 Tbsp vegan butter until warm and melted. Let cool until the temperature of bath water-it shouldn’t be too hot or it will kill the yeast
  2. Add the almond milk/butter mixture to a large mixing bowl and sprinkle on yeast. Let activate for 10 minutes, then add 1 Tbsp sugar and the salt and stir
  3. Add in the flour, half a cup at a time whilst stirring until the dough is sticky. Once it is too thick to stir, transfer it to a lightly floured surface and knead until it forms a ball. Rinse the mixing bowl and coat with canola oil, then add the dough. Cover and set in a warm place for 1 hour until the mixture has doubled in size
  4. On a floured surface, roll out the dough. Brush with 3 Tbsp melted butter and top with ¼ cup sugar and the cinnamon
  5. Roll up the dough and cut into sections. Brush the remaining butter (melted) and cover with a plastic wrap. Preheat the oven to 350 F
  6. Bake the rolls for 30 minutes until they are slightly golden. Cool for a few minutes and serve immediately
  7. (Optional Step) Frost the rolls with icing (1 cup powdered sugar and 2 Tbsp almond milk)
  8. Enjoy!
