Vegan Taco Pizza
Serves 3-5
Pizza Crust
- 2 cups all-purpose flour
- ½ tsp salt
- 2 tsp olive oil
- ⅔ warm water
Taco meat
- 1 cup vegan mince
- 1 tbsp oil
- ¼ onion, diced
- 4 cloves of garlic, minced
- ¼ cup tomato paste
- Salt and pepper to taste
- ¾ tsp thyme
- 1 tsp paprika
- Optional :
- ¾ tsp oregano and/or cumin
- ½ tsp chilli powder
For the pizza toppings
- 1-2 avocados
- 1-2 tsp lime juice
- ½ tsp salt
- ¼ red onion, diced
- Handful of black olives
- Handful of cherry tomatoes
- Handful of corn kernels
- ½ red pepper, diced
- Handful of fresh cilantro
- Vegan sour cream/cheese
Method:
- Mix 1 ½ cups flour, yeast and salt. Add the olive oil and warm water until the dough mixture because rough and sticky. Use the remaining ½ cup flour to lightly coat a clean work surface and knead the dough until a soft ball forms. Wash out the bowl, dry and lightly coat with olive oil. Place the dough in the bowl and cover for at least 1 hour to let rise.Preheat the oven to 500 F.
- Prepare the guacamole by firstly mashing the avocado/s with the back of a fork in a small bowl until smooth. Add in the lime juice, ½ tsp salt, majority of the red onion and mix well to incorporate.
- Prepare the taco meat. On medium heat, heat the olive oil in a medium-sized saucepan. Once hot, add the garlic and onion and cook until caramelised. Add the vegan mince, tomato sauce and other seasonings. If the mixture gets a bit dry add a dash of water. Cook for 5 minutes until the seasonings are fragrant. Turn off the heat, cover, and set aside to preserve heat.
- Once the dough has risen, roll onto a lightly oiled pan until the thickness of the crust is about medium/thick or a 30cm diameter circle. Poke holes in the crust using a fork and bake for 10-15 minutes until the crust is golden brown.
- Top the base with the avocado, taco meat and vegetable toppings and enjoy with friends and family!
