  • Handful of black olives
  • Handful of cherry tomatoes
  • Handful of corn kernels
  • ½ red pepper, diced
  • Handful of fresh cilantro
  • Vegan sour cream/cheese
Method:
  1. Mix 1 ½ cups flour, yeast and salt. Add the olive oil and warm water until the dough mixture because rough and sticky. Use the remaining ½ cup flour to lightly coat a clean work surface and knead the dough until a soft ball forms. Wash out the bowl, dry and lightly coat with olive oil. Place the dough in the bowl and cover for at least 1 hour to let rise.Preheat the oven to 500 F.
  2. Prepare the guacamole by firstly mashing the avocado/s with the back of a fork in a small bowl until smooth. Add in the lime juice, ½ tsp salt, majority of the red onion and mix well to incorporate.
  3. Prepare the taco meat. On medium heat, heat the olive oil in a medium-sized saucepan. Once hot, add the garlic and onion and cook until caramelised. Add the vegan mince, tomato sauce and other seasonings. If the mixture gets a bit dry add a dash of water. Cook for 5 minutes until the seasonings are fragrant. Turn off the heat, cover, and set aside to preserve heat.
  4. Once the dough has risen, roll onto a lightly oiled pan until the thickness of the crust is about medium/thick or a 30cm diameter circle. Poke holes in the crust using a fork and bake for 10-15 minutes until the crust is golden brown.
  5. Top the base with the avocado, taco meat and vegetable toppings and enjoy with friends and family!
