Who wants a delicious, dirt-cheap vegan dinner that takes 10 minutes to prepare?!

Vegan Pesto Pasta

Serves 2

*Recipe can easily be multiplied to suit serving needs

  • 1 cup packed fresh basil
  • 1 cup spinach
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 tbsp pine nuts
  • 1-2 cloves garlic
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste
  • 2 cups pasta of choice
Optional Toppings:
  • Nutritional yeast/Vegan parmesan
  • Cherry tomatoes
  • Olives
  1. Cook pasta ast per packet instructions.
  2. Meanwhile blend all pesto ingredients in a high speed blender until well combined.
  3. Add the pesto mix to the pasta after it has finished cooking and mix well. Add in optional toppings if desired. This delicious plant-based meal can be stored in the fridge for up to a week in an airtight container and tastes delicious hot or cold!
