Vegan Pesto Pasta
*Recipe can easily be multiplied to suit serving needs
- 1 cup packed fresh basil
- 1 cup spinach
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 3 tbsp pine nuts
- 1-2 cloves garlic
- 2 tbsp nutritional yeast
- Salt and pepper to taste
- 2 cups pasta of choice
- Nutritional yeast/Vegan parmesan
- Cherry tomatoes
- Cook pasta ast per packet instructions.
- Meanwhile blend all pesto ingredients in a high speed blender until well combined.
- Add the pesto mix to the pasta after it has finished cooking and mix well. Add in optional toppings if desired. This delicious plant-based meal can be stored in the fridge for up to a week in an airtight container and tastes delicious hot or cold!
