Today, in honor of National Sandwich Day, we’re feasting on this dangerously delicious (yet completely guilt-free) vegan BLT Sandwich with Tempeh Bacon. Enjoy!

BLT Sandwich with Tempeh Bacon
Prep time: 15 minutes
Makes 2-3 servings
Cook time: 20 minutes
Bread of choice
Vegan mayo
2 or 3 tomatoes, sliced
Lettuce or greens of choice
8 oz package of tempeh
1/4 cup maple syrup
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoon white vinegar
1 tablespoon nutritional yeast
1 tablespoon liquid smoke, hickory flavor
1 teaspoon garlic powder
1 teaspoon chipotle powder
1 teaspoon black pepper
1/2 teaspoon salt
Directions:
- Preheat oven to 250 degrees. In a large Ziploc bag or shallow bowl, mix together maple syrup, olive oil, soy sauce, white vinegar, nutritional yeast, liquid smoke, garlic powder, chipotle powder, black pepper and salt.
- Thinly slice the tempeh and add it to the marinade. Let marinade for around 10 minutes.
- Line a baking sheet with tin foil and spray with non-stick spray or coat with a thin layer of oil. Spread the marinated tempeh onto the pan in a thin layer. Place into preheated oven and bake for 10 minutes. Flip and continue to bake for another 10 minutes. Remove from oven.
- Spread mayo on to bread and top with bacon, sliced tomato and lettuce or greens of choice.
