MAKES 3 SERVINGS
INGREDIENTS:
- 1 cup yellow potato, peeled and diced
- ⅓ cup chopped carrot
- ⅓ cup chopped onion
- Macaroni pasta (around 2 cups for 3 servings)
- ¼ cup vegan cheese
- 2 tbsp olive oil
- ½ tsp garlic powder
- Salt and pepper to taste
METHOD:
- Add potato, carrot and onion to a pot with boiling water and simmer until softened
- Meanwhile cook the pasta following the packet instructions
- Separate the vegetables from the liquid and place in a blender (save the liquid they were cooked in)
- Add in ¼ cup of the vegetable cooking liquid, vegan cheese, pepper, salt, garlic powder and olive oil to the blender and blend until the mixture reaches a smooth, creamy consistency
- Add the cheese sauce to the drained macaroni pasta
- Season with salt and pepper to taste and any extra vegan cheese
