MAKES 3 SERVINGS

INGREDIENTS:
  • 1 cup yellow potato, peeled and diced
  • ⅓ cup chopped carrot
  • ⅓ cup chopped onion
  • Macaroni pasta (around 2 cups for 3 servings)
  • ¼ cup vegan cheese
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • Salt and pepper to taste
METHOD:
  1. Add potato, carrot and onion to a pot with boiling water and simmer until softened
  2. Meanwhile cook the pasta following the packet instructions
  3. Separate the vegetables from the liquid and place in a blender (save the liquid they were cooked in)
  4. Add in ¼ cup of the vegetable cooking liquid, vegan cheese, pepper, salt, garlic powder and olive oil to the blender and blend until the mixture reaches a smooth, creamy consistency
  5. Add the cheese sauce to the drained macaroni pasta
  6. Season with salt and pepper to taste and any extra vegan cheese
