Ok, ok. We can’t lie. These aren’t the healthiest cookies in the world, but they’re plant-based and cruelty-free, so we’re going to count that as a win!
Healthy*ish Oreos
Ingredients:
- ¾ cup oat flour
- ¼ cup cocoa powder
- ¼ cup unrefined sugar
- ¼ tsp salt
- ¼ tsp baking soda
- 1 tsp pure vanilla extract
- ¼ cup vegetable (coconut) oil
- 3 tbsp plant milk
- 2 tbsp maple syrup
Icing
¼ cup cocoa butter (or sub for any vegan butter)
½ cup powdered sugar
½ tsp vanilla extract
Method:
- Mix the first five ingredients in a bowl until well combined
- Mix in the remaining ingredients into the same bowl
- Roll the mixture into a ball and refrigerate for 30 mins. Meanwhile preheat the oven to 300 F
- Roll the mixture out until it is a thin dough and cut into cookie shapes using either a cookie cutter or a circle-shaped lid
- Grease a baking tray with parchment paper and bake for 10 minutes
- Whilst the cookies are cooling sk the cocoa butter until light and fluffy, then add the other icing ingredients
- Add 1 tsp of the icing sugar to each oreo cookie, then top each with the remaining oreo cookies. Refrigerate for 30 minutes.
- Serve up and enjoy! These taste delicious with a tall glass of plant milk
