Ok, ok.  We can’t lie.  These aren’t the healthiest cookies in the world, but they’re plant-based and cruelty-free, so we’re going to count that as a win!  

Healthy*ish Oreos

Ingredients:
  • ¾ cup oat flour
  • ¼ cup cocoa powder
  • ¼ cup unrefined sugar
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 1 tsp pure vanilla extract
  • ¼ cup vegetable (coconut) oil
  • 3 tbsp plant milk
  • 2 tbsp maple syrup

Icing

¼ cup cocoa butter (or sub for any vegan butter)

½ cup powdered sugar

½ tsp vanilla extract

Method:
  1. Mix the first five ingredients in a bowl until well combined
  2. Mix in the remaining ingredients into the same bowl
  3. Roll the mixture into a ball and refrigerate for 30 mins. Meanwhile preheat the oven to 300 F
  4. Roll the mixture out until it is a thin dough and cut into cookie shapes using either a cookie cutter or a circle-shaped lid
  5. Grease a baking tray with parchment paper and bake for 10 minutes
  6. Whilst the cookies are cooling sk the cocoa butter until light and fluffy, then add the other icing ingredients
  7. Add 1 tsp of the icing sugar to each oreo cookie, then top each with the remaining oreo cookies. Refrigerate for 30 minutes.
  8. Serve up and enjoy! These taste delicious with a tall glass of plant milk
