1. Minestrone Soup with Fresh Herbs from the Wholesome Culture Cookbook

Minestrone Soup with Fresh Herbs from the Wholesome Culture Cookbook

 

Makes 3-4 servings

Prep time: 5-7 minutes

Cook time: 15-20 minutes

  • 3 tablespoons olive or vegetable oil
  • 2 medium carrots
  • 1 small zucchini
  • 1 medium white onion
  • 1 stalk of celery
  • 1/4 cup of kale, stems removed
  • 1/4 cup diced mushrooms (optional)
  • 3.5 cups of tomatoes, diced
  • 3 cups vegetable broth
  • 2 cups of white beans, drained
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup medium shell pasta
  • 1/4 cup fresh parsley, chopped
  • 3-4 tablespoons fresh basil, chopped
  • 1Β teaspoonΒ fresh oregano, chopped

Directions:

  1. Chop carrots and zucchini into small pieces, roughly 1/3 inch in size. Add 3 tablespoons of oil to a large pot on medium heat and add in the carrots and zucchini. Cook for 1-2 minutes, stirring occasionally.
  2. Chop the white onion, kale, and mushrooms (if desired) into similarly small pieces and add to the pot. Finely dice the celery [1] and add it in as well.
  3. Then, add the diced tomatoes to the blender and blend forΒ around 5-10Β seconds or until mostly smooth. Pour into the pot. Add in the vegetable broth and canned beans. Let cook for 5 minutes, stirring occasionally.
  4. Add in cumin, chili powder, smoked paprika, garlic powder, salt, pepper and one cup uncooked pasta. Cook for 5 minutes.
  5. Chop fresh parsley, basil and oregano into small pieces and add to the soup. Continue to cook for another 3-5 minutes, stirring occasionally, until pasta is cooked.
  6. Remove from heat and serve.

Notes:Β [1] The celery should be chopped smaller than the other vegetables.

EASY VEGAN BROCCOLI CHEDDAR SOUP πŸ₯¦ A veganized version of the Panera classic and call me crazy but I think this might be better 😍 This is perfect for the cold fall and winter months and it only takes 40 minutes to make! It’s super creamy, decadent, flavor packed AND it’s made with whole food ingredients and nothing funky. The recipe is below and also linked in my bio! ✨ ⁣ Ingredients⁣ * 1Β cup raw cashews, soaked overnight* (see notes)⁣ * 2Β cups filtered water⁣ * 1/2Β cup nutritional yeast⁣ * 1Β tbspΒ fresh lemon juice⁣ * 3 1/4 cups vegan chicken broth or vegetable broth of your choice (see notes)⁣ * 1/2 medium onion, finely diced⁣ * 1 rib celery, finely diced⁣ * 2 cloves garlic, finely minced⁣ * 2 3/4Β cupsΒ finely chopped broccoli⁣ * 1 cup carrot, julienned⁣ * 1/4 tsp nutmeg⁣ * 1Β tsp salt, plus more to taste⁣ * Black pepper, to taste⁣ Garnishes (optional)⁣ * Fresh parsley⁣ * Vegan croutons⁣ ⁣ Instructions⁣ 1. Drain the cashews and transfer them to a high speed blender along with 2 cups of water, nutritional yeast, and lemon juice. Blend on high until smooth and set aside.⁣ 2. In a large pot over medium heat, add 2 tbsp of vegetable broth along with the onions and celery. SautΓ© until softened, about 3 minutes. Add the garlic and cook for 2 minutes more, adding 2 more tbsp of vegetable broth as needed to prevent burning.⁣ 3. Add the remaining vegetable broth to the pot along with the blended cashew mixture and mix until uniform. Add the broccoli, carrots and nutmeg and mix again until combined. Bring to a boil and lower to a simmer. Cook for 15-20 minutes, stirring often, until the soup has thickened.⁣ 4. Remove it from the heat and season with salt and pepper to taste.⁣ 5. Serve warm with a garnish parsley and croutons. ⁣ Notes⁣ * You can quick soak cashews in hot water as well: Bring a small pot of water to a boil, remove from heat and add in the cashews.
