Ultimate Buddha Bowl
Ingredients:
Chickpeas:
- 1 1/2 cups chickpeas
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp paprika
- 1 tsp chili powder
- 1/8 tsp turmeric
- 1/2 tsp oregano
Red Sauce:
- 1 red bell pepper
- 2 tbsp olive oil
- Juice from 1/2 lemon
- 1/2 tsp pepper
- 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 cup cilantro
Optional Ingredients for serving:
- Greens
- ½ an avocado
- Rice/couscous/quinoa or other starch of choice
Method:
- Prepare the cous cous or other starch of choice and preheat oven to 425 F.
- In a bowl, toss all ingredients for the roasted chickpeas. Bake for 15-20 on a baking tray lined with parchment papers.
- Prepare the red pepper dressing by adding all ingredients to a high speed blender. Adjust seasonings to taste.
- Assemble the couscous, mixed greens, avocado, chickpeas, drizzle with the red pepper sauce and sprinkle with sesame seeds.
