Ultimate Buddha Bowl

Ingredients:
Chickpeas:
  • 1 1/2 cups chickpeas
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1 tsp chili powder
  • 1/8 tsp turmeric
  • 1/2 tsp oregano
Red Sauce:
  • 1 red bell pepper
  • 2 tbsp olive oil
  • Juice from 1/2 lemon
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 cup cilantro
Optional Ingredients for serving:
  • Greens
  • ½ an avocado
  • Rice/couscous/quinoa or other starch of choice
Method:
  1. Prepare the cous cous or other starch of choice and preheat oven to 425 F.
  2. In a bowl, toss all ingredients for the roasted chickpeas. Bake for 15-20 on a baking tray lined with parchment papers.
  3. Prepare the red pepper dressing by adding all ingredients to a high speed blender. Adjust seasonings to taste.
  4. Assemble the couscous, mixed greens, avocado, chickpeas, drizzle with the red pepper sauce and sprinkle with sesame seeds.
