5 reasons kale is basically the best vegetable
If there’s one leafy green we’re totally obsessed with right now, it’s kale.
Here’s why we think kale is the king of supergreens!
Kale is FULL of nutritious goodness!
- Vitamins A, C, and K
- Vitamin B6
- Folate (an essential B vitamin for healthy brain development)
- Nutrients lutein and zeaxanthin which protect against cataracts and muscular degeneration
- Minerals like phosphorus, and zinc
In other words, kale is one of the most nutrient-dense vegetables in existence.
It’s low in calories – but high in fiber and protein
Not only is kale abundant in vitamins and minerals, but it’s also incredibly low in calories.
One cup of raw kale contains:
- Only 33 calories
- 6 grams of carbs (of which 2 grams are fiber keeping you full for longer!)
- nearly 3 grams of protein!
It contains very little fat – and most of that fat is an omega-3 fatty acid (the good fat we need more of!).
So, if you’re looking for a healthy and nutritious low-calorie snack, well – you have some kale shopping to do.
It contains powerful antioxidants
- Vitamin C
- Various flavonoids and polyphenols
Antioxidants are the substances that help our bodies counteract oxidative damage – meaning that they keep us looking and feeling young for longer, as well as help our bodies fight various diseases (including cancer).
It’s ridiculously versatile
Kale can be used in virtually any type of dish; delicious and fresh salads, detoxifying smoothies, flavorful stir-fries, creamy pasta sauces, and – yes – even ice cream!
