From turnips and parsnips to yams and yuca, root vegetable recipes are often underrated when it comes to creating dishes in the kitchen. They’re full of fiber, antioxidants, and lots of vitamins. Plus, root vegetables are packed with flavor and known to keep us full. What’s not to love!

15 plant-based root vegetable recipes that’ll keep you warm all winter
1. Sweet Potato Chili from the Wholesome Culture Cookbook
Makes 4 servings
Prep time: 5-7 minutes
Cook time: 15-20 minutes
- 2-3 tablespoons vegetable oil
- 1 large red sweet potato
- 1 medium white onion
- 1 green bell pepper
- 1 stalk of celery
- 3.5 cups of tomatoes, diced
- 2 cups of black beans, drained
- 1/2 cup meatless ground beef
- 3 tablespoons chili powder
- 3 tablespoons ground cumin
- 4 teaspoons smoked paprika
- 1 and 1/2 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 cup parsley, chopped
- 1 jalapeño (optional)
Directions:
- Chop sweet potato into cubes. Add 2-3 tablespoons of oil to a large pot on medium heat. Add in sweet potato and stir occasionally.
- While the sweet potato cooks, finely dice the celery. Then, chop the bell pepper and onion into small pieces. Add these to the pot and cook for around 3 minutes.
- Meanwhile, blend the diced tomatoes in a blender for around 5-10 seconds then add them to the pot. At this time, also add in the black beans and the vegan ground beef. Stir well.
- Add in chili powder, cumin, smoked paprika, garlic powder and salt. Stir and continue to cook for 5-7 minutes.
- Add in chopped parsley and continue to cook for another 2-3 minutes or until sweet potato is cooked thoroughly.
- Serve with sliced jalapeños, if desired.
