‘Tis the season for baking and enjoying a sweet treat with a tall glass of (almond) milk so we’ve rounded up 7 of our favorite holiday-themed cookies for you to try:

If you like funfetti cake, you’ll fall in love with our funfetti cookies! Straight from The Wholesome Culture Cookbook, here’s the sneak peek recipe:

Prep time: 5 mins

Cook time: 10 mins

Makes 16-24 cookies

  • 3/4 cup vegan butter
  • 1 cup cane sugar
  • 1/4 cup coconut cream
  • 1 1/2 tablespoon egg replacer
  • 2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 teaspoon baking soda
  • 1 1/2 cups all purpose flour
  • 1/4-1/3 cup sprinkles of choice

Directions:

  1. Preheat your oven to 350.
  2. Cream together the vegan butter and cane sugar in a large bowl until smooth. Then add in the coconut cream, egg replacer, vanilla, salt, and baking soda and stir until combined.
  3. Add in the flour 1/2 cup at a time and stir until a crumbly dough forms. Add in your sprinkles and stir until evenly distributed.
  4. Roll your dough into 1-1 1/2 inch balls and flatten slightly onto a baking sheet lined with parchment paper. Bake for 10-12 minutes until the edges of the cookies begin to brown slightly. The cookies will still appear soft when they leave the oven, but this is okay. Allow them to sit for 5 mins before removing from pan.

I’ll be honest, I’m not much of a baker 🤷‍♀️ It stems from my inability (or unwillingness to be exact) to follow directions. I’m always trying to do things my way. This works fine with cooking – I often end up with creative customized dishes. It doesn’t work so well with baking, which was evident after no less than ten rounds of modifying this cookie recipe 🤦‍♀️ It was totally worth it though – these #vegan #glutenfree white chocolate cranberry Christmas cookies are the stuff sugar plum dreams are made of ❤️ They’re perfectly crispy on the outside, chewy on the inside with rich #plantbased buttery flavor. These gluten-free cookies are deliciously nutty and a tad decadent with festive pistachios and white chocolate.

New to vegan baking? Here are a few tips to get the perfect cookie every single time:

  1. Chill your dough!

Not all recipes require it but if you find your batter to be sticky, greasy or too wet, pop it in the fridge for a few hours before baking. It’ll keep your cookies from spreading too much and heightens the flavor.

  1. Use a silicon baking mat or parchment paper.

It will prevent your cookies from sticking to the bottom of the tray and help them keep their shape (non-stick spray can make them spread).

  1. Keep your left-over chickpea liquid.

Aquafaba (the water used to cook chickpeas) is the perfect egg replacement in cookie baking! If you don’t have any on hand, flax eggs (1 tablespoon of ground flax seeds mixed with 3 tablespoons of water) are also a good option!
