4. Vegan Pumpkin Bread with Cashew Buttercream

Pumpkin Spice Loaf with Cashew Buttercream Frosting. I’ve been tweaking this recipe over the last week and today I’m starting on recipe test #4. Am I annoyed that I have to keep testing it? Yes. Am I excited to get it right? Also yes. ⁣⁣ ⁣⁣ Failure is always part of the process, it’s always part of the road to success. But as a lifelong perfectionist, this is not as easy for me to accept as I’d like to admit. I’d like to tell you that I let failures, big and small, slide off my back the way a little kid who’s just fallen down quickly gets up after a six-second cry. I wish I could say that I don’t take failures personally, that I don’t allow my failures to sow seeds of doubt within me, doubts about my talents and worth that, on occasion, can feel all-consuming. I wish I could tell you those things, but I can’t. ⁣⁣ ⁣⁣ But now for the good part. After many years (decades) of ignoring these feelings, I am now learning how to deal with them. And here are some things that are helping me along the way & I hope that they might help you too:⁣⁣ ⁣⁣ * Talking to someone who loves me and reminds me (even without me asking) that I am an awesome human.⁣⁣ * Also talking to someone who helps me remember that I am living my dream life, and that even the most dreamy life has its ups and downs. ⁣⁣ * Reading messages from you all – this wonderful community, this thoughtful tribe of incredibly kind humans – that remind me I’m doing something useful and positive with my life, and really, what’s better than that??⁣⁣ * Watching funny videos of tiny fury puppies being bathed in sinks, grumpy cats in Halloween costumes, monkeys befriending chickens, and any other animal cuteness overload. ⁣⁣ * Thinking of what I’ve accomplished and what I’m proud of. Listing out the things you’ve accomplished forces you to think about the good / stop focusing on the bad, and is an excellent reminder of your overall badassery. ⁣⁣ ⁣⁣ That’s my long way of saying “You’re more wonderful than you give yourself credit.”⁣

14. Vegan Apple Tart with Walnut Crust

View this post on Instagram

I know a lot of you are trying a wholesome vegan lifestyle for the new year 👏🏾🙌🏾 Don’t forget your healthy desserts though! A balanced vegan diet doesn’t require you to forgo delicious sweets. The key is replacing highly processed sugars with more wholesome ones (like dates & maple syrup), and making desserts with complex carbs and fiber rich ingredients (like spelt flour, oats, nuts, and fruit) which help stabilize your blood sugar levels and prevent you from overeating…and if you do overeat the sugars won’t immediately turn to fat on your body. This apple tart right here is freaking delicious. Actually, I like it with pears even better! Recipe at http://bit.ly/veganappletart Happy #Veganuary ✌🏾🐷🐮🐥❤️ Recipe adapted from @amychaplin
