Thanksgiving wasn’t always my favorite holiday. When I was younger, we didn’t even celebrate it because my parents are from India and lifelong vegetarians and the idea of a day devoted to eating turkey and stuffing (and lots of other dishes that have no spice) seemed silly. ⁣ ⁣ But as my sister and I got older, the more important it became to us to incorporate American traditions into our first-generation immigrant family. If I ate green beans and sweet potato casserole on Thanksgiving, then, just maybe I would fit in more with my classmates, maybe kids would make fewer “your house smells like curry” jokes, or maybe my teachers would stop asking/demanding to know why my parents were Hindu instead of Christian. ⁣⁣ ⁣⁣ Despite having no natural interest in Thanksgiving, my parents came to embrace this American tradition. The dinner was never fancy: a lot of it came from boxed mixes, cans, and frozen bags. ⁣ ⁣ And my dad would always put spicy Indian pickles on every dish (yes, even mashed potatoes), and sometimes my mom would make a few special Indian dishes for a hybrid Thanksgiving — these were dishes she didn’t ordinarily have time to make because she had two full-time jobs and was excellent at both. ⁣ ⁣ But my parents continued to play along with this holiday because it was important to my sister and me, because they wanted nothing more than for us to be happy. ⁣⁣ ⁣⁣ Of course, as I got older and started to learn how to cook, I took over most of the Thanksgiving duties. And while making delicious food has always been important to me, even more so was keeping the tradition alive, a tradition that bridged two generations and two cultures and made us feel a bit closer. ⁣⁣ ⁣⁣ So when I say Thanksgiving is my favorite holiday, sure, I say that because I love having an excuse to cook and eat a bunch of comfort food. But really, I say that because it reminds me of the sacrifices my parents have made for us. It reminds me of how hard they have worked over the last 35 years to fit in so that my sister and I could feel comfortable and live comfortably. It reminds me of how precious the time that I have with my family is. That’s why I love Thanksgiving.

Have you tried my Plantain Quesadillas before? I’ve made these with love of course and these are whole foods driven. I know that you will love these quesadillas because my whole family does! Also, thanks so much for all the love you guys have given me it makes me tear up a bit. 🙈❤️ . . Recipe 3 tortillas of your choice @tastemirancho 2 ripe plantains 1 cup of store bought vegan cheese (made my own) 1 large slicer tomato (diced) 2 cups of spinach ½ a cup of cilantro 1/4 of a cup of purple cabbage 1 whole eggplant (1 cup worth) 2 tbsp of Tamari soy sauce 3 tbsp of coconut oil A pinch of black pepper A pinch of pink salt . . Guacamole 1 large avocado 3 minced garlic cloves (roasted) 2 tbsp of lemon juice 1 tsp of cumin 1 tsp of red pepper flakes A dash of pink salt . . Directions Cut your eggplant (thinly diced), cook and stir with 1 tbsp of oil of choice, soy sauce, and pepper. It takes about 10-15 minutes to cook (add 2 tbsp of water if needed instead of adding more oil). Set aside. Cut your plantains into 3 long pieces (2 plantains make 6 long flat pieces) and fry with 1 tbsp of oil. Make sure your plantains are ripe (must be black spotted on the outside). Set aside Cook your spinach on a pan with 1 tbsp of water just enough to get it wilted. 2 min Make your guacamole by just mashing your avocado and adding all ingredients together. Mix well. Finally cook your tortillas, add your cheese(homemade or store bought), and layer it up with some plantain, eggplant, wilted spinach, and diced tomatoes. Garnish with some purple cabbage, cilantro, and some vegan sour cream. Enjoy.

It's amazing in this sandwich with vegan mayo, cranberry sauce, chestnut spread and veggie sausages which really takes this sandwich to the next level!
