Vegan Chocolate Chip Macadamia Nut Cookies

Vegan Chocolate Chip Macadamia Nut Cookies recipe from the Wholesome Culture Cookbook

Makes 12-18 cookies

Prep time: 7-8 minutes

Cook time: 8-15 minutes

  • 1 cup vegan butter, softened
  • 1 cup organic light brown sugar
  • 1/2 cup organic cane sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon ener-g egg replacer powder plus 4 tablespoons water
  • 1/2 teaspoon baking soda
  • 1/3 teaspoon salt
  • 2 and 1/4 cup all-purpose flour
  • 1 cup chocolate chips
  • 1/2 cup chopped macadamia nuts

Directions:

  1. Preheat oven to 350 degrees.
  2. Add vegan butter, cane sugar, brown sugar, vanilla extract, egg replacer powder plus water, baking soda, and salt to a large bowl. Using a hand mixer, cream together the ingredients on medium speed for around 90 seconds.
  3. Using a spoon, mix in the flour. Once thoroughly mixed, add in chocolate chips and chopped macadamia nuts.
  4. Line a baking sheet with parchment paper. Scoop uniform spoonfuls of dough, 2 to 4 tablespoons big onto cookie sheet, leaving around 2 inches between each cookie.
  5. Place into preheated oven and bake for 8-10 minutes for small cookies and 12-15 minutes for large cookies, or until edges begin to turn golden brown.

Notes: Cookies will continue to crisp up after baking, so if you prefer soft cookies make sure to take them out as soon as the edges turn golden brown.
